Why a "cup" of flour and a "cup" of sugar weigh differently

A cup is a unit of volume, not weight - it measures how much space an ingredient takes up, not how heavy it is. Flour is light and full of air pockets, so a cup weighs about 120g. Sugar packs more densely, so a cup of it weighs about 200g. Butter is denser still, at roughly 227g per cup. This is why baking recipes that give weights in grams are more precise than ones that only give cups - the Ingredient tab here uses standard reference densities for common baking ingredients.

Oven temperature and Gas Mark

US recipes almost always use Fahrenheit, most of the rest of the world uses Celsius, and older UK recipes (and some ovens) use Gas Mark, a numbered scale from 1 (lowest) to 9 (highest). A moderate oven - 350°F / 180°C - is Gas Mark 4, the most common baking temperature.
